I enjoy the process of BBQ more so, than the end results. We all see what everyone is eating, but I like to share how I get there. Everyone has their own way & that's how u learn. An open fire & watching those coals do their work is very relaxing, but can be a lot of work. I'm using a indirect method of keeping the coals on the outside of the meat so the bottom doesn't get burnt. I like to keep a chunk of hickory or two inside to add smoke.
After a spell, I'll spray my mop & keep turning the meat.
