Wrapped some venison in bacon, jalapeño poppers and some grilled asparagus. Only downside was the steaks were closer to well than I wanted due to crisping up the bacon. Still ate well! Slathered everything in an apple butter BBQ sauce. Man it was good!
Squirrel/Ramp/Chanterelle gravy on mashed yukon golds with sauteed Snow Peas. Finally, I have found a vegetable that is worthy of sitting on my plate next to this gravy Used a cube of my frozen ramp pesto. Awesome. Ramp pesto now going to be an annual project for me.
Fish fry today for 30 or so folks but I didn't get pictures until the first pan of catfish was almost gone. Still a good time and a great meal. Fried catfish, fried gar, homemade remoulade, homemade tartar sauce, slaw, chicken tenders, corn on the cob, blackberry cobbler and apple cobbler. Some of our guest brought a homemade banana pudding and chocolate cake to boot. Also had some top notch help rounding up fish for the cooking!!!
simple grilled salmon, sauteed oyster mushrooms, sauteed black staining polypore mushrooms, home grown salad. this farm raised salmon comes from the Sixty South Salmon company in the Tiara Del Fuego region of Chile. Antarctic waters. I'm not an authority on Salmon, but this is the finest salmon I've ever eaten, farm raised or wild caught, by a very wide margin. we order it through a local Amish deli. comes to Johnstown by way of the Catanese Seafood Co. in Cleveland once a week.
