What's For Dinner?

We butchered our chickens this morning that I mentioned in the other thread. This was the biggest one at 7.9lbs dressed and we cut him up for tonight's dinner. image.jpg

I'm often asked how I learned to cook. The response is I didn't. I just do. Tonight is a great example of that.

My wife texts me earlier and says: "I want dirty quinoa" and no, that's not a sex move...

I was out of regular quinoa, but had this Harvest Grains stuff I buy to go with tacos. I thawed a pack of my spaghetti mix which is locally sourced whole hog sausage mixed with venison. I cooked that up with garlic, balsamic vinegar, grass fed butter and Worcestershire sauce. Mix the two and drop a farm fresh sunny side egg on top with some Sriricha and DAMN!!!

Pick the dinner, lol. Outer Banks, NC. We walked next door to a Fresh Seafood Market. Pick what you want and they steam it. I fell in love with the Soft Shell Crabs.

That seafood market is a routine stop for us. I could pay X amount for a charter and waste a day or have a guaranteed catch for less than $ 100.00 at the Seafood Market.
Take it back to the beach house and fry it up over a couple cold ones.

My effort to lose weight and change my life style has centered around quality ingredients and healthier choices. Tonight I have home butchered 4H chicken smothered in homemade Carolina mustard BBQ sauce. That's paired with the first squash from the garden and home canned green beans. Damn tasty meal with a clear conscious. Can't beat it!

been married to the light of my life for 18 years tomorrow. I'm one lucky bastard. of all the things we could eat to celebrate, including going to The Refectory(which is arguably the finest dining establishment in the greater Columbus area), this is what she wanted. Blackened venison loin, high heat roasted asparagus and mashed potatoes, real ones. I'm one lucky bastard. :pickle:
