My Chanterelle supply had been in the fridge since Wednesday. There are probably 4-5lbs left and they are holding up really well. Still, they don't last forever. I made Escoffier's Cream of Chanterelle soup again yesterday to use some of them up. Nancy took the time to make a couple of seriously awesome fresh baguettes to eat with them. I didn't take any pics of dinner, but this soup is something special and one of my favorite ways to eat Chanterelles. Probably my second favorite way to eat them is for breakfast. Chanterelle, Garden Salsa pepper sauteed in a teaspoon of Ghee with a couple of beaten eggs. Left over baguette makes for some world class toast, too.
Hoping we get some good rains in the next few days and some more golden fruit comes out of the ground. I've not had my fill yet.
