I'm at it again. Chicken n ribs w/ cabbage ... again. I'm feeding the Brittany's owners tonight. I've been wanting to try this pit method by feeding coals underneath the meat with the fire off to the side. It's nice to get away from maintaining the correct smoke, but it's a chore just the same. I always enjoy watching videos of the old timers taking their time using their pits.
Another great thing about this method is the smoke from the fire rises up & doesn't swirl around your face. The blind is in a crappy position, but that spot is the only place that's level. I have the deflector up so no wayward sparks piss me off.
