The journey has begun. It's gonna be a long haul, 10 lb brisket after being trimmed.... 10 - 12 hr smoke ? Then, a # of hrs sitting to bring IT back down to @ 160 ? Then wrap & back in the smoker at a very low temp until serving time @ 6p.

I've got 5 racks of ribs & some other goodness planned for tomorrow's cooks.

Brisket update .... I hardly slept, so fuggin tired. I'm going to feel like a zombie. Took the brisket out at 6a. IT reached 209. IT is now 165, so it'll go onto the warming rack for the rest of the day here in a lil bit. I put a lump of wood directly under the meat to create a hump for the juices to flow downward into the flat. Getting ready to fire up the 2nd smoker.
